Core Criteria:

• Grade 12 essential; Chef Certificate or Diploma required
• Minimum 1–2 years' experience in a similar Pastry CDP role
• Strong knowledge of hygiene, food safety, and HACCP requirements
• Excellent attention to detail in presentation, portion control, and quality standards
• Ability to work effectively under pressure while maintaining consistently high standards
• Strong interpersonal and communication skills, both written and verbal
• Ability to work collaboratively within a team across all departments and cultures
• Comfortable engaging with a very distinguished and discerning clientele
• Flexible, reliable, punctual, and self-disciplined
• Willingness to work evenings, weekends, and public holidays

• Prepare and present all pastry dishes according to prescribed recipes, specifications, and plating standards
• Ensure all mise en place is freshly prepared, on time, and to the required standard at all times
• Ensure correct garnishing, portion sizes, and presentation on all dishes leaving the section
• Maintain strict health, hygiene, and food safety standards throughout all areas of the pastry section
• Ensure proper handling and storage of all food items in line with HACCP requirements
• Monitor and control the quality, quantity, and cost of all dishes prepared within the section
• Maintain par stock levels and communicate ingredient orders to the Sous Chef timeously
• Accept and store all food deliveries according to SOPs
• Continuously look for ways to optimise speed and quality within the cooking process
• Contribute positively to a smooth, friendly, and professional kitchen environment at all times
