SUMMARY:
A new luxury safari lodge in the Greater Kruger area is seeking a skilled and driven SOUS CHEF to join its kitchen brigade.

POSITION INFO:
This role suits a hands-on culinary professional who thrives in a remote bush setting, supports the Head Chef in delivering refined menus, and keeps a small, high-end kitchen running to a consistently high standard.

Core Criteria:

Proven experience as a Sous Chef or strong Chef de Partie within a luxury hospitality environment
Sound knowledge of food costing, stock control, and kitchen administration
High standards of hygiene, food safety, and kitchen cleanliness
Strong leadership skills, with the ability to train and motivate a small team
Ability to work under pressure in a remote lodge environment
Creative, with attention to detail and presentation
Reliable and flexible, willing to work varied hours

Core Responsibilities:

Support the Head Chef in running the daily kitchen operation
Prepare and present high-quality meals for guests and staff
Maintain consistency in recipes, portioning, and plating standards
Assist with menu development and food costing
Manage stock control, ordering, rotation, and regular stock takes
Uphold all hygiene, health, and food safety standards
Supervise, train, and mentor kitchen team members
Lead the kitchen in the Head Chef's absence
Report equipment and maintenance issues promptly
