SUMMARY:
The Junior Sous Chef assists the Head Chef and Senior Sous Chef in the daily running of the kitchen, ensuring the preparation and delivery of high-quality meals that meet the lodge’s luxury standards. This role is responsible for supporting kitchen operations, supervising junior kitchen staff, maintaining hygiene standards, and assisting with stock control. The Junior Sous Chef plays an important role in maintaining consistency, efficiency, and exceptional guest dining experiences.
Key Responsibilities

Assist in the preparation and presentation of high-quality meals for guests
Support the Head Chef and Senior Sous Chef in daily kitchen operations
Supervise and guide junior kitchen staff during service
Ensure food is prepared according to lodge standards and recipes
Maintain consistency in taste, quality, and presentation
Assist with stock control, stock rotation (FIFO), and inventory management
Monitor portion control and help reduce wastage
Ensure all kitchen areas are clean, organized, and compliant with hygiene standards
Assist with receiving and checking stock deliveries
Help with menu preparation and implementation
Accommodate guest dietary requirements and special requests
Ensure compliance with health, safety, and food handling regulations
Step into higher kitchen responsibilities when required
Work effectively as part of the kitchen team to ensure smooth service
Assist with monthly stock takes and kitchen reporting

POSITION INFO:
Qualifications

Professional Chef Qualification / Culinary Diploma (essential)
Food Safety and Hygiene Certification (advantageous)

Experience

Minimum 2–4 years’ experience in a professional kitchen
Previous experience as a Chef de Partie or similar role preferred
Experience in hospitality, luxury lodges, or fine dining environments is advantageous
Experience in a la carte and plated service preferred

Skills & Competencies

Good culinary knowledge and cooking techniques
Strong understanding of food preparation and presentation
Basic stock control and food costing knowledge
Good leadership and team support skills
Ability to work under pressure in a fast-paced environment
Strong organizational skills
Good understanding of hygiene and food safety standards
