Griller Chef - Live Out

SUMMARY:
Job Purpose
We are seeking an experienced and passionate Griller to join our kitchen team. The successful candidate will be responsible for preparing and cooking high-quality grilled meat, poultry, and fish dishes while maintaining exceptional food quality, consistency, hygiene, and food safety standards. This role requires excellent product knowledge, attention to detail, and the ability to perform efficiently in a fast-paced 4- or 5-star hospitality environment.
Key Responsibilities
Food Preparation & Cooking

• Prepare and cook beef, poultry, fish, and other grilled items according to company recipes and standards.
• Ensure the correct cooking methods and temperatures are used for all meat products.
• Maintain consistency in portion sizes, presentation, and quality.
• Prepare vegetables and accompaniments for the grill section while minimizing food wastage.
• Ensure all dishes are served promptly and meet the establishment's quality standards.

• Identify and understand the different cuts of beef, poultry, and fish.
• Portion, trim, clean, marinate, and store meat according to food safety regulations.
• Ensure all meat products are correctly labelled, dated, rotated (FIFO), and stored at the appropriate temperatures.
• Monitor stock quality and report any shortages or quality concerns immediately.

• Check stock levels daily to ensure all required ingredients are available.
• Prepare daily mise en place based on operational requirements.
• Assist with receiving deliveries and verifying product quality.
• Participate in monthly stock takes and inventory counts.
• Minimise wastage through careful preparation and portion control.

• Maintain a clean and organised grill station at all times.
• Follow all food safety, hygiene, and sanitation procedures.
• Ensure compliance with Health and Safety regulations.
• Clean equipment, utensils, and workstations before, during, and after service.

• Work closely with the Head Chef and other kitchen staff to ensure smooth kitchen operations.
• Assist colleagues during busy service periods when required.
• Communicate effectively regarding stock shortages, equipment issues, or operational concerns.
• Maintain a positive and professional attitude at all times.

POSITION INFO:
Minimum Qualifications

• Diploma or Certificate in Culinary Arts or a related field from a recognised institution.

• Minimum of 5 years' experience working as a Griller or in a Hot Kitchen Section.
• Previous experience in a 4-star or 5-star hotel, lodge, or restaurant is essential.

• Strong knowledge of meat cuts and grilling techniques.
• Excellent understanding of cooking temperatures and food preparation methods.
• Knowledge of food safety, hygiene, and HACCP principles.
• Ability to prepare vegetables and accompaniments efficiently.
• Experience with stock control and inventory management.
• Good knife skills and meat preparation techniques.
• Ability to work efficiently under pressure.
• Strong organisational and time management skills.
