BREAKFAST SOUS CHEF

Franschhoek: My client, a contemporary, high-end dining establishment is seeking to employ BREAKFAST SOUS CHEF who is passionate about delivering exceptional cuisine and supporting a high-performing kitchen team. This role requires someone who thrives in an upmarket, fast-paced environment and is ready to contribute to world-class food preparation, execution and service.

POSITION INFO:
Purpose of the Role: To lead and manage the breakfast kitchen operations, ensuring the consistent preparation and presentation of high-quality breakfast dishes while maintaining excellent hygiene standards, efficient kitchen organisation, and a calm, professional service environment. The role supports the Executive Chef in delivering memorable morning dining experiences that reflect the restaurant’s focus on seasonal, farm-driven cuisine.

Key Responsibilities

Lead and manage breakfast service kitchen operations
Prepare and execute high-quality breakfast dishes
Ensure consistency, presentation, and quality across all dishes
Manage breakfast preparation and mise en place
Supervise and guide junior kitchen staff during morning service
Maintain excellent hygiene and food safety standards
Assist the Executive Chef with menu development
Ensure efficient stock control and ordering for breakfast operations
Maintain a calm and organised kitchen during busy services
Assist with general kitchen operations when required

Criteria

Previous experience as a Sous Chef or strong Senior Chef de Partie ready to step up
Culinary qualification or relevant professional training
Passion for cooking and working with seasonal, farm-driven ingredients
Excellent organisational and leadership skills
Strong attention to detail and plating standards
Positive attitude and ability to work within a professional kitchen team
Fully bilingual (English and Afrikaans)
Live in close proximity to Franschhoek
