Sous Chef

SUMMARY:
A luxury lodge in the Hoedspruit region is seeking a qualified and experienced Sous Chef to join its culinary team.
 
The successful candidate will support the Head Chef in the day-to-day management of the kitchen while ensuring exceptional food quality, efficient kitchen operations, and high standards of hygiene. This role is ideal for a hands-on chef who is confident working independently and capable of running the kitchen in the Head Chef's absence.

POSITION INFO:
REQUIREMENT: 

• RSA ID and legal residence essential
• Recognised Chef qualification
• Minimum 2–5 years' experience as a Sous Chef within a professional hospitality environment
• Strong knowledge of stock control, stock takes, and ordering procedures
• Experience with menu planning and food costing
• Knowledge of food waste control and cost management
• Proven ability to train, mentor, and develop kitchen staff
• Excellent understanding of food safety, hygiene, and kitchen cleaning standards
• Ability to work independently and confidently manage the kitchen in the Head Chef's absence
• Positive attitude with strong leadership and organisational skills 

• Assist the Head Chef with the daily operation of the kitchen
• Prepare and present high-quality meals to lodge standards
• Manage kitchen operations in the Head Chef's absence
• Conduct stock takes and manage stock ordering
• Monitor food costs and minimise wastage
• Assist with menu planning and recipe consistency
• Train and mentor kitchen staff to maintain high standards
• Ensure compliance with food safety, hygiene, and health regulations
• Maintain a clean, organised, and efficient kitchen environment 

• R10,000 – R18,000 per month (DOE)
• Live-in accommodation provided
• Breakfast and dinner provided
