As we continue our exciting transformation into one of Cape Town’s leading luxury destinations, we are seeking an experienced, exceptionally knowledgeable, and passionately dedicated Sommelier to join our Food and Beverage team. This role demands someone who truly lives and breathes wine, a professional who combines mastery of varietals with warm, intuitive hospitality.
What We Are Looking For
We are searching for a service professional who brings both expert level wine knowledge and refined guest engagement to every table.
Requirements:
• Valid South African ID or work permit
• Matric (Grade 12)
• A recognised wine qualification such as WSET Level 2 or 3, Cape Wine Academy Diploma, or an equivalent certification
• Minimum 3 years recent Sommelier experience within luxury hotels, fine dining restaurants, or premium wine estates
• Exceptional knowledge of South African and international wines, varietals, appellations, and terroirs
• Strong tasting ability with precise palate descriptors and pairing expertise
• Confident, polished presentation and guest interaction skills
• Ability to train, mentor, and uplift service teams in wine theory and service technique
• Familiarity with POS systems such as Micros and wine inventory management
• Flexibility to work evenings, weekends, and public holidays
What You Will Do
• Curate and manage a refined, balanced, and innovative wine list
• Guide guests with expert recommendations on pairings, vintages, and tasting notes
• Conduct wine tastings, activations, and educational experiences
• Collaborate with the Executive Chef on bespoke pairings for menus and events
• Train service teams on wine knowledge, pouring standards, and guest engagement
• Ensure correct storage, rotation, cellar organisation, and stock accuracy
• Drive revenue through upselling, promotions, and exclusive wine offerings
• Uphold hygiene, safety, and quality standards in line with hotel policies
