SUMMARY:
300+ Seater Family Style Restaurant in Durbanville, Cape Town is looking for an exceptional Wood-Fired Pizza Chef to lead their pizza station.
Pizza is a key part of the restaurant’s offering. The successful candidate will bring strong dough knowledge, expert wood-fired oven skills and the ability to maintain quality and speed in a high-volume environment.

Duties:
Dough Preparation & Pizza Standards:
Prepare pizza dough with consistent recipes, fermentation and proofing processes.
Monitor dough quality, storage and readiness for service.
Develop and maintain pizza preparation, topping and presentation standards.
Ensure consistent bases, bake quality and finished presentation.
Maintain portion controls and minimise ingredient wastage.
Wood-Fired Oven & Service:
Manage the oven fire, heat distribution and temperature throughout service.
Coordinate pizza preparation and baking to ensure accurate orders and timely delivery.
Maintain consistent quality and speed during high-volume service.
Work closely with the kitchen and front-of-house teams to ensure smooth service.
Team Leadership & Station Management:
Train and lead the pizza station team.
Coach staff on dough handling, stretching, topping, baking and presentation.
Ensure the station is stocked, organised and ready before service.
Maintain clean equipment and work areas, following food hygiene and fire-safety procedures.
Requirements:
Proven experience as a Wood-Fired Pizza Chef.
Strong practical knowledge of wood-fired ovens, including fire and heat management.
Thorough understanding of dough recipes, fermentation, proofing and consistency.
Ability to develop and maintain pizza standards, bake quality and presentation.
Experience training and leading a pizza station team.
Ability to deliver consistent quality and speed in a high-volume restaurant.
Good understanding of portion control, stock rotation and waste management.
Strong communication, organisation and teamwork skills.
A reliable, hands-on approach and attention to detail.
Willingness to work evenings, weekends and public holidays.
