A prestigious boutique hotel in Durban is seeking a skilled and passionate Chef de Partie to join its culinary team and contribute to delivering exceptional dining experiences for guests.
This role is ideal for a dedicated hospitality professional who takes pride in producing high-quality dishes, maintaining exceptional kitchen standards, and working within a professional brigade. The Role
As Chef de Partie, you will be responsible for managing a designated kitchen section and ensuring that all dishes are prepared and presented according to the hotel's standards. You will work closely with the Sous Chef and Head Chef to maintain smooth kitchen operations, uphold food quality standards, and support junior team members during service.
The successful candidate will be highly organised, able to perform effectively under pressure, and committed to maintaining the highest standards of food preparation, hygiene, and presentation.
Key Responsibilities
- Manage the daily operations of an assigned kitchen section.
- Prepare, cook, and present dishes to the highest quality standards.
- Ensure all mise en place is completed accurately and efficiently before service.
- Maintain consistency in food preparation, portion control, and presentation.
- Supervise and support Commis Chefs and junior kitchen staff.
- Monitor stock levels within your section and report shortages promptly.
- Minimise wastage through effective stock rotation and portion control.
- Ensure all food is stored, handled, and prepared in accordance with food safety regulations.
- Maintain cleanliness and organisation within your designated section.
- Assist with menu preparation, special events, and private functions.
- Ensure all kitchen equipment is used safely and maintained correctly.
- Work collaboratively with the wider kitchen team to ensure smooth service delivery.
Minimum Requirements
- Relevant Culinary Qualification or Professional Chef Certification.
- Minimum 2–4 years' experience as a Chef de Partie, Demi Chef de Partie, or Senior Commis Chef within a hotel, resort, lodge, restaurant, or hospitality environment.
- Strong cooking skills and experience within a professional kitchen.
- Knowledge of food safety, hygiene, and HACCP principles.
- Experience managing a specific kitchen section during service.
- Ability to work effectively in a fast-paced environment.
- Excellent organisational and time management skills.
- Strong attention to detail and commitment to quality.
- Ability to work shifts, weekends, and public holidays.
