Chef De Partie

SUMMARY:
The Chef de Partie is responsible for managing a designated section of the kitchen, ensuring the preparation and presentation of high-quality dishes in accordance with the establishment's standards. This role requires strong culinary skills, attention to detail, and the ability to work efficiently in a fast-paced environment while supporting the Sous Chef and Executive Chef in delivering exceptional dining experiences.
Key Responsibilities

• Manage and oversee a designated kitchen section (e.g., Hot Kitchen, Cold Kitchen, Pastry, Grill, or Sauce).
• Prepare, cook, and present dishes to the highest quality and presentation standards.
• Ensure consistency in food quality, portion control, and plating.
• Follow standard recipes and preparation methods.
• Assist with menu preparation and the development of new dishes.
• Ensure all mise en place is completed before service.
• Monitor stock levels within the assigned section and report shortages.
• Assist with ordering, receiving, and storing stock correctly.
• Ensure proper stock rotation using FIFO principles.
• Minimise food waste through effective preparation and portion control.
• Maintain a clean, organised, and hygienic work area at all times.
• Comply with all food safety, hygiene, and HACCP standards.
• Ensure kitchen equipment is used correctly and report maintenance issues promptly.
• Supervise and assist Commis Chefs and Kitchen Assistants within the section.
• Provide on-the-job training and support to junior kitchen staff.
• Work collaboratively with the wider kitchen brigade to ensure efficient service.
• Assist with special functions, events, and private dining experiences.
• Ensure all guest dietary requirements and allergies are accommodated accurately.
• Maintain professional communication with the Front of House team to ensure smooth service.
• Adhere to company policies, procedures, and health and safety regulations.

• Full-time position requiring shifts, weekends, public holidays, and evenings.
• Fast-paced, physically demanding kitchen environment.
• May require live-in accommodation at remote lodges or resorts.

POSITION INFO:
Minimum Qualifications

• Certificate or Diploma in Culinary Arts, Professional Cookery, or Hospitality.
• Food Safety and Hygiene Certification (HACCP knowledge preferred).

• Minimum of 3–5 years' experience in a professional kitchen.
• Previous experience as a Chef de Partie or experienced Demi Chef de Partie preferred.
• Experience in luxury lodges, hotels, restaurants, or fine dining establishments is advantageous.
• Experience working in high-volume or multi-outlet kitchens is beneficial.
