Butchery Manager

SUMMARY:
A well-established company in Springbok, Northern Cape is on the hunt for a driven and experienced Butchery Manager to take the lead!

POSITION INFO:
Key Responsibilities:
Butchery Operations and Profitability:

• Ensure sales and gross profit (GP) targets are met.
• Monitor productivity and efficiency (sales per man hour).
• Control departmental expenses within budget.
• Conduct accurate weekly stock takes and implement proper stock procedures.
• Ensure costings, block tests, and product pricing are accurate and up to date.

Stock and Production Management:

• Maintain ideal stock levels per category and species.
• Plan production effectively to maximise shelf life and reduce waste.
• Ensure KVIs are always in stock and manage rewraps within budget.
• Implement daily stock rotation, set expiry dates, and monitor product freshness.
• Ensure consistent product quality, cutting standards, and display presentation.
• Manage promotional activity and develop value-added product lines.

Buying and Ordering:

• Order quality raw materials and expense items daily.
• Monitor supplier performance and ensure accuracy of deliveries.
• Maintain ideal stock holding levels and process claims timeously.

Pricing and Point of Sale:

• Ensure scale labels and price tickets are correct, neat, and accurate.
• Conduct competitor price checks and implement pricing strategies.
• Maintain clean, updated signage and ensure POSWARE updates are current.

Hygiene, Safety, and Housekeeping:

• Enforce proper sanitation and pest control procedures.
• Ensure compliance with hygiene and food safety standards (≥90% swab tests).
• Maintain clean, organised cutting rooms, displays, and equipment.
• Implement and monitor cleaning schedules for all areas and equipment.

Staff Supervision and Development:

• Recruit, train, and discipline staff in line with company procedures.
• Provide training in hygiene, safety, product knowledge, and cutting skills.
• Conduct performance reviews twice per year and hold daily production meetings.
• Optimise staff schedules, manage overtime, and plan leave cycles.
• Ensure staff maintain high grooming and uniform hygiene standards.

Customer Service and Complaint Resolution:

• Implement systems to ensure accurate customer orders and quality fulfilment.
• Handle complaints professionally and resolve customer issues promptly.
• Advise customers on products, cooking methods, and new product offerings.
• Build strong relationships with regular customers and uphold guarantees.

Store Opening and Closing:

• Ensure butchery department is ready for trading and complies with standards.
• Implement shrinkage and security controls to protect assets and stock.

Requirements:

• Matric / Relevant Certificate or Diploma in Butchery, Food Services, or Retail Management (SAQA recognised).
• Additional: Training in hygiene, food safety, and customer service will be advantageous.
• 3–5 years’ experience in a butchery environment, with at least 2 years in a supervisory role.
• Proven ability to manage production, stock, and staff performance.
• Strong leadership and interpersonal skills.
• Ability to manage inventory control, GP, and waste reduction.
• Proficiency in POS systems and ordering systems.
• Ability to train and mentor staff effectively.
• Understanding of hygiene regulations and South African food safety laws.
• Knowledge of cost control, stock management, and GP calculations.
• Familiarity with retail operations and SPAR operating standards.

• Sales Growth – Achievement of monthly and annual sales targets.
• Gross Profit – Maintain GP margins within company targets.
• Stock Accuracy – Minimal shrinkage and accurate weekly stock takes.
• Hygiene & Safety – Consistent compliance above 90% on audits and swabs.
• Customer Satisfaction – Timely handling of orders and complaints.
• Staff Performance – Trained, productive, and compliant butchery team.
