Support the Bar Manager in the daily operation of a high-volume hotel bar

As the hotel continues its journey toward luxury, strong on-floor leadership within our Food & Beverage operation is essential to ensuring consistent service delivery in a fast-paced, high-volume environment.
We are recruiting an experienced Assistant Bar Manager to support the leadership and day-to-day operations of our busy bar outlets. This is a key supervisory role suited to a hands-on hospitality professional with exceptional bar knowledge, strong people management skills, and a passion for service excellence.
This role is ideal for a confident bar professional who leads by example, remains calm under pressure, and consistently delivers high standards in both service and product.
Key Responsibilities
Bar Operations & Service Delivery
- Support the Bar Manager in the daily operation of a high-volume hotel bar
- Maintain consistently high service and presentation standards
- Ensure efficient bar operations during peak service periods
- Lead from the floor with a hands-on, guest-focused approach
Beverage Knowledge & Cocktail Standards
- Prepare and serve cocktails and beverages to a high luxury standard
- Ensure recipe consistency, product knowledge, and quality control
- Uphold beverage presentation standards across all bar offerings
People Management & Training
- Train, coach, and support new and existing bar team members
- Assist with staff supervision, performance monitoring, and discipline where required
- Maintain a visible leadership presence during busy trading periods
Stock Control & Cost Management
- Assist with bar stock management, including ordering, receiving, issuing, and stock takes
- Monitor stock levels, wastage, and cost control
- Ensure correct storage, rotation, and control procedures are followed
Compliance & Operational Control
- Ensure compliance with health & safety, hygiene, and liquor legislation
- Enforce hotel policies, procedures, and service standards
- Assist with incident reporting and operational handovers as required
Minimum Requirements
- Matric (Grade 12) – essential
- Proven experience as an Assistant Bar Manager or Senior Bartender
- Experience within:
- 4 or 5-star hotels
- Luxury or upmarket restaurants
- Strong hands-on cocktail and mixology experience
- Exceptional bar management knowledge and operational skills
- Experience in training and supervising bar staff
- Solid understanding of bar stock control and cost management
- Must be based in Cape Town
