POSITION INFO:

A position for a Sous Chef has become available at a unit in Grahamstown

Duties / Responsibilities:

  • Effectively supervising and managing other kitchen staff
  • Responsibly seizing control of situations or problems that may arise at any moment and calmly applying the relevant action to address any issue
  • Work closely with your head chef/F&B Manager to effectively control stock and food GP, and identify opportunities to maximise profitability
  • Where necessary, managing underperforming staff members as well as providing incentives for staff members to go above and beyond the expectations of their chef roles
  • Good knowledge of creating, implementing, and maintaining written control documents and training manuals. Outside of the kitchen, take responsibility for, or effectively delegate the kitchen due diligence procedures including HACCP; OHS; food wastage and CHESS logs
  • Food Hygiene and professional cooking qualifications (Beneficial)
  • Ability to multitask and work efficiently under pressure
  • Ability to co-ordinate and train the kitchen team to produce menus and food items with attention to detail, and high standards of presentation
  • Good understanding of food trends and able to design menus
  • Knowledgeable of all dietary and religious requirements
  • Good knowledge and understanding of stock procedures and control
  • Good knowledge of planning, budgeting, and departmental administration to assist where necessary

Minimum Requirements:

  • Minimum 24 months experience as Sous Chef or Higher Rank on Chef Brigade within a volume environment
  • A passion for fresh food and pizza!
  • Good initiative to increase efficiency and remain busy during working hours, adding value all the time
  • Proven management capabilities and effectively trained junior team members
  • Impeccable food hygiene standards and fanatic attention to detail as well as due diligence when it comes to policies and procedures
