Head Chef ‘s requirements: “Act as my 2IC, so that you and me operate as a team”

Duties

As the Sous Chef, you will be reporting directly into the Head Chef. Directing the food preparation process and delegating tasks

  • Cooking and preparing high quality dishes
  • Assisting the Head Chef to create menu items, recipes and develop dishes
  • Supervising all kitchen stations
  • Supervising, motivating and working closely with other Chefs of all levels
  • Being responsible for health and safety
  • Being responsible for food hygiene practices
  • Ensuring food quality and excellent standards are maintained for all dishes created
  • Assisting with determining food inventory needs, stocking and ordering
  • Ensuring the kitchen meets all regulations including sanitary and food safety guidelines

Must have:

  • 2-5 years’ exp as a Sous Chef
  • Pastry Sous exp would be advantageous
  • Guest oriented and service minded

Must be

  • Able to cover all areas in the kitchen
  • Take responsibility in absence of Head Chef
  • Preparing desserts, such as crème bule, chocolat4e mouse, etc
  • Responsible, Self-Disciplined, Reliable & Hardworking
  • Able to work shifts
  • clean on self & on your kitchen

Tertiary qualifications:

  • Tertiary qualification in a culinary science or related certificate from a credible institute
  • NVQ Level 2
  • Level 3 Food Safety Awards
  • Level 1 and 2 Food Safety Awards
  • Exposure to Control of Substances Hazardous to Health Regulations (COSHH) and safety
  • Exposure to a variety of kitchen equipment


Required Soft skills:

  • Sound knowledge of all sections
  • Ability to present good-looking & quality food
  • Good communication skills
  • Well-spoken in English
  • Strong team management skills
  • High level of attention to detail
  • Good level of numeracy
  • Enthusiasm to develop your own skills and knowledge plus those around you
