Description:

A sommelier is a wine expert that creates wine lists that pair with food menus. Sommeliers create and update wine lists, make recommendations on food and wine pairings, and advise guests on wines based on their personal tastes.

Responsibilities:

  • Create and update the wine list in coordination with Executive Chef and General Manager
  • Recommend food and wine pairings
  • Advise guests on wines based on their personal tastes and food choices
  • Inform guests about different varieties of wines and prices
  • Ensure wines are served at the right temperature and within the proper glassware
  • Store open bottles properly to maintain strong taste quality and life span of wine
  • Manage wine cellar and ensure it’s fully-stocked
  • Manage stock levels and order stock accordingly to ensure we are never out of stock
  • Train wait staff on available wines
  • Negotiate purchase prices with vendors
  • Organize wine tasting days or “wine of the month” events
  • Comply with all health and safety regulations

Requirements:

  • Preferably 2 - 3 years wine tasting experience and applicable product knowledge
  • Cape Wine Academy/WSET Level 2
  • 2 – 3 Years’ experience as a Sommelier, Wine Steward/Stewardess or similar role
  • In depth knowledge of wines - grape varieties and regions, harvest times, climates, soils and wine making process and being able to communicate and explain this to guests
  • Passionate about wine and the hospitality industry
  • Ability to create tasteful food and wine pairings
  • Extensive knowledge of different wines and which regions produce each type
  • Knowledge of local vineyards and wineries
  • Understanding of the winemaking process
  • Good communication skills
  • Flexibility to travel occasionally to meet with wine producers and attend wine-tasting events
  • Certification as a Sommelier or degree in hospitality
  • Excellent interpersonal & communication skills.
  • Strong customer service orientation
  • Ability to lead junior staff
  • Proactive in keeping up to date with food and beverage trends
  • Flexibility to assist in other areas as and when needed according to operational requirements
  • Immaculate appearance
