This is really an exciting opportunity for an individual that is really passionate about the Hospitality/Restaurant Industry the flagship store will be based in Bromley and is scheduled to open 15th December onboarding of the GM will be the 1st November The CTC of £48 000.00 includes contributory pension and Medical Insurance
PURPOSE
The Captain (General Manager) is the official representative of the brand and the leader of the restaurant. The captain sets the course that creates our Mediterranean Home experience for both the crew and the customer, and follows course by using instruments for business success provided by home office.

The ideal captain of our ship has infectious energy and a natural leaning to hospitality. He/she obsesses about the small details such as great teamwork, the perfect meal and a clean and welcoming front of house. Composed under pressure, a clear communicator and is not afraid of confronting difficult situations with customers or crew. He /she takes pride in his/her personal brand and has stamina for those long hours on the bridge.

TASKS
STORE PROCEDURES

  • Monitor and control the implementation of BOH and FOH procedures.
  • Conduct and manage opening and closing procedures for both BOH and FOH.
  • Conduct brands audit together with store management team as directed and designed by Home Office.
  • Accountable to correct deviations
  • Accountable for maintenance systems and equipment using guidelines from Home Office.
  • The Captain must perform the duties of The First and Second Mate when the store is busy, or a member of the team is absent.
  • The Captain must ensure that the financial systems, POS, and brand processes are followed according to the standards of operations.

This includes but is not limited to:

  • Responsible to prepare all cash needed for banking.
  • Manage and monitor stock takes.
  • Prepare stock recordings and reviews for the Home Office.
  • Work with the Buying team to facilitate ordering.

CREW ACTIVITIES

  • Accountable for approving the final shift allocations prepared by the First and Second Mate
  • Designs the management shift plan.
  • Accountable for participating in the processes for recruiting new or casual staff.
  • Coaches management and crew in the daily operations.
  • Conducts one on ones with its leadership team.
  • Monitors the implementation of one-on-one meetings with his leaders and their crew.
  • Prepares for and conducts a monthly business update according to a set conversation guide
  • Drives crew recognition and rewards programs.
  • Drives the activities that support career pathing (in line with our purpose of creating opportunities)
  • Implements any policies driven by Home Office.
  • Induction and training of new crew and casuals using the Brands material and support lessons.

CUSTOMER ACTIVITIES

  • Works on the floor during all busy trading times
  • Greeting and welcoming guests
  • Takes orders and takes food to tables when very busy/when required
  • Manages the hatch to check on food quality and service.
  • Attends to all customer complaints and rectifies.
  • Document and share all customer feedback with the team.
  • Scan social media platforms every day to pick up customer comments

COMMUNITY ACTIVITIES

  • Own and build relationships with local stakeholders (police, schools, fellow restauranteurs) by having coffee at the store and when the relationship is key offer a lunch.

COMPLIANCE

  • Responsible for overall compliance upkeep in the store and must abide by the rules of the country and brand office.
  • Update and maintain all compliance certification that is required in the business.
  • Confirmed that all crew are signed off on all health and safety required training.

SKILLS

  • Basic excel skills
  • Numerative skills (must be able to analyse income statements, pick up discrepencies)
  • Problem solving (ability to see a problem, step back, review all the information, get input and make a decision)
  • Social media skills
  • Strong communication skills especially verbal (spelling does not matter). Verbal skills include the ability to tell a compelling story and have clear expression of words.

QUALIFICATIONS:

  • Formal qualifications do not impress us. Even Elon Musk does not ask for degrees. It is always interesting to see if people have taken their knowledge further. The thing we do like about qualifications is it demonstrates a thirst for knowledge and learning.

EXPERIENCE:

  • At least 8 years working in the restaurant industry or in other Food and Beverage roles (cruise liners, hotels).
  • At least 3 years experience in a leading role
