•Hotel Management or F&B Management qualification
•Cape Wine Academy or WSET Level 2 certificate
•Italian speaking is advantageous
Experience and skills:
•Minimum of 5 years in the same or similar role
•Fine dining experience in a top 20 restaurant in the last 5 years
•Food and wine pairing service
•Knowledge and experience of Italian cuisine is advantageous
•Administer payroll, performance, conduct, hiring and training of all front of house staff
•Proficiency in Microsoft office applications at intermediate level
•Proficient in operating restaurant point of sale systems and cash-ups
•Implement and monitor policies, processes and standards to ensure effective fine dining restaurant service is provided to guests
•Management and administration of all front of house staff and cleanliness of the restaurant
•Management and control of operating equipment and stocktakes, identifying ways to reduce waste and improving financial savings
•Identify and capitalise on opportunities to up-sell products and services
•Takes responsibility to drive revenue to meet and exceed annual budgets
•Ensure that all waitering and bar service staff receive ongoing training in service and food safety
