SUMMARY:
Cookhouse Area – EC: Primary role is to oversee all lab activities and to ensure that all tests are done according to the correct methods; and further to ensure that Cheese Makers and Management are timely informed of any non-conforming results.
POSITION INFO:
MINIMUM REQUIREMENTS
- B. Sc. Microbiology / Food Science Diploma / B. Sc. Food or relevant qualification
- Min of 5 years previous lab experience work – in the dairy industry advantageous
- Min of 3 years previous management experience
- Computer literate
- Strong verbal and written communications skills in English and Afrikaans
- Proven administration skills including record keeping skills / time management / product knowledge / show attention to details
Duties and responsibilities, including but not limited to:
- Control of all products results (Chemical, Micro, Pathogenic, Swabs)
- Controlling results and capturing of it on the lab files.
- Prepare weekly graphs of all results.
- Handle enquiries regarding lab results
- Availability of results
- Generate COA’s as requested.
- Accuracy of results
- Rejection of products out of spec
Part of the problem-solving team in connection with Quality & Food Safety.
Food Safety
- No deviations from work instructions and procedures
- Corrective action system – generates CAR’s as needed, do root cause analyses and maintain target dates.
- Monitor all ingredient used batch numbers and expiry dates
- No deviations from procedures and work instructions
- Wear PPE according to rules
- Report any pests, glass breakages, missing end-caps and other food safety related issues
- Abide by Code of conduct
- Use cleaning equipment according to the set colour coding
- Report any missing tools, nuts, bolts, etc.
Lab stock levels
- Order lab consumables and measuring equipment as needed from approved suppliers according to the ordering procedures
Training
- Develop a training program for the lab
- Train and evaluate all lab staff in specific test methods
- Assist departments in generic training
Staff
- Productivity of lab analysts.
- Assigning responsibilities to lab staff.
- Repeatability and accuracy of results.
- Resolving disciplinary problems and conflicts.
- Minimize mistakes or contamination.
- Handling of internal lab problem.
- Daily lab meetings.
- Manage lab staff leave.
Audits
- Assist QA with internal and external audits.
External lab testing for verification purposes.
- Develop a program for external testing.
- Arrange for samples and send samples to an accredited laboratory
- Comparing results from lab with external lab results.
Quality
- Reporting of any non-conforming products
- Generate CAR’s for any observed non-conformances, complete CAR’s in time and follow up.
- Maintain target dates
Swabs – See that all areas are swabbed according to the program
Lab Equipment
- Arrange calibration samples for the Milko-Scan and calibration of the Milko-Scan
- General maintenance of lab equipment
External lab tests
Milk producers:
- Arrange samples for BM testing
- Arrange for testing of milk samples with outside lab (BM, SCC, Urea).
- Sending results to admin for capturing on system
Pathogens: Arrange samples for testing with accredited outside lab.
Analysing tanker milk for Aflatoxin M1.
Arrange testing of COD on effluent water.
Arrange water samples for testing against SANS 241 with an accredited outsourced lab
Lab hygiene and general housekeeping in lab
Health & Safety
- Follow all the safety rules
- Report any unsafe situations
