Game Lodge Head Chef
Sabi Sands
Salary R25K Live in
Head Chef for a 5* Luxury Lodge in the Sabi Sands. You will be required to facilitate the effective and smooth operation of the lodge kitchens.
Key Focus areas:
Design and implement menus for the lodge that meet the demands and exceed the expectations of the guests
Comprehensive knowledge of current leading culinary trends in food and beverage
To manage and monitor all costs and implement measures to control them
Assume full responsibility for costs, stores, losses and discrepancies
Targeting cost to deliver a consistently excellent product
Requirements – Qualifications and Skills
Grade 12
5 years of Hospitality experience & 3 years’ experience as a head chef
Formal qualification from a reputable culinary institution
Drivers License and own transport essential
Product knowledge:
In depth knowledge of food preparation and kitchen hygiene
Experience with and understanding of all dietary and religious requirements
Knowledge of menu compilation and up-to-date market trends
Knowledge and understanding of stock procedures and control
Excellent attention to detail
Proactive use, initiative and creative flair when required
Leadership skills with passion for development and skills transfer
