Description:

The Chef De Rang will operationalise and manage all customer interactions, including seating, recommending/upselling menu items, taking orders, fulfilling orders and servicing their needs as guests of the restaurant.

Responsibilities:

  • Reports to the Restaurant Manager
  • Directly supervises, supports and evaluates the performance of the subordinate positions within the Restaurant
  • Mentors, develops and provides on-the-job training to new recruits in order to improve their current performance allowing them to gain skills and abilities for future development
  • Responsible for coordinating the trolley and flambé service on each table demonstrating to the customers his/ her ability to cook, carve and flambé
  • Table side service experience
  • Predominantly dinner service
  • Directly responsible for checking the serving trolley and controlling the daily inventory of crockery and cutlery
  • Must posses a solid knowledge of all menu items and be able to describe them to Guests, suggesting various courses as well as have pairing knowledge (wines, whiskeys, gins etc)
  • Pays a close attention to Guest needs and reports their special requests or complaints to the Restaurant Manager
  • Excellent communication with the kitchen team

Requirements:

  • Formal hospitality training - a diploma from a recognised hotel school/ university or international equivalent is preferred
  • Minimum of 2-3 years previous experience in a fine dining food service and preparation field in an upscale restaurant
  • Culinary and wine knowledge as well as practical experience in fine dining restaurant service
  • Excellent communication skills and good command of the English language (written and spoken), knowledge of additional languages is a plus
  • Strong managerial skills and ability to work in a multicultural environment
  • Proactive in keeping up to date with food and beverage trends
  • Immaculate appearance
  • Working knowledge on point of sales systems
