SUMMARY:
A fabulous opportunity is now open for an experienced Butcher (Management Level). The successful candidate will manage the staff aspect and food production of the butchery.

POSITION INFO:

AREA: Franschhoek (Close to Stellenbosch)

REPORTS TO: Executive Chef

KEY RESPONSIBILITIES INCLUDES BUT ARE NOT LIMITED TO:

  • Adhere to all relevant policies, procedures, SOP’s and OHS act 
  • Develop new products in collaboration with Executive Chef and provide input regarding current and new butchery Products
  • Manage and maintain all butchery inventory and equipment in a cost-effective manner while maintaining the best quality of products
  • Create recipes and costing for all butchery products and liaise with finance to ensure invoices are paid
  • Ensure that all products are up to standard, produced in time and reached all relevant clients in time
  • Optimize all relevant policies, procedures and chef principals with attention to speed, quality and customer satisfaction
  • Make sure that all areas and equipment are always clean, hygienic and safe for staff and guests
  • Record and manage all breakages, wastage and maintenance issues  
  • Conduct daily cash-ups and handovers pertaining all operational information including financial aspects 
  • Manage and control wastage and assist in maintaining the recycling program  
  • Assist in handling all customer complaints related to butchery products 
  • Handle all butchery staff requests and issues in a sensitive, fair and respectful manner
  • Train, coach, mentor and guide butchery staff  
  • Develop trustful and professional relationship with staff, management, vendors and guests for recurring business
  • Ensure that all required preparation has been done for the next day’s business

 

REQUIREMENTS:

  • A minimum of 8 years work experience in a wholesale environment (on management level)
  • Must be willing to work as operationally required (early and late shifts)
  • Strong knowledge of all relevant OHS principles 
  • Proficient in MS Office and basic inventory principles.
