SUMMARY:

Abbatoir based in Cullinan is looking for a Supervisor, for their sheep abbatoir
Supervise the end-to-end slaughter process, from stunning to chilling & end-to-end offal production process, incl. slaughter floor, handling, packing, storing & dispatch, ensuring maximum effectivity of people and equipment. Integrate quality in all aspects of operations.

 



POSITION INFO:

Production

  • Ensure the correct batches are received in the correct sequences for slaughtering.
  • Correct stunning procedures are followed and correct bleeding times are applied.
  • Correlation between heads and feet to ensure synchronisation of carcass and offal.
  • Assure correct slaughtering technique are applied including dressing standard as well as hides and skin quality.
  • Ensure Animal welfare.
  • Oversee that hygiene standards are applied throughout all process and procedures.
  • Responsible for the application of the correct selection criteria and quality standards (e.g. neatness; sequence etc.) of stamping.
  • Following inspection of quantities apply correct sealing of cold room’s procedure.
  • Reconcile and secure all classification equipment and approval stamp.
  • Ensure that all procedures are implemented in accordance with legal requirements e.g. stunning; carcass and offal correlation etc.
  • Report all non-conformances (quality and maintenance) to immediate.
  • manager and apply effective remedial action according to company procedures.
  • Responsible for entire offal production process.
  • Develop, review and implement efficient and effective procedures and processes to optimize production.
  • Responsible for the delivery of product according to a set standard, at a reasonable cost and productivity.
  • Stock control management (stock rotation).
  • Weekly stock take.
  • Oversee that hygiene standards are applied throughout all process and procedures.
  • Responsible for the application of the correct selection criteria and quality standards (e.g. neatness; sequence etc.) of labelling.
  • Following inspection of quantities apply correct sealing of freezers procedure.
  • Ensure that all procedures are implemented in accordance with legal requirements e.g  hygiene.
  • Report all non-conformances (quality and maintenance) to immediate manager and apply effective remedial action according to company procedures.

Qualification details

  • Grade 12
  • Tertiary qualification in Environmental Health/Food Science will be highly advantageous

Experience

  • 3 years’ operational experience in Abattoir processes.
