Job Description
This is primarily a Food and Beverage role, ideally seeking Chef experience (but not essential)as well as F&B Stock Control, Ordering and Service Management experience. The responsibilities of this role will be menu planning, training of staff, food cost management, orders. There will be shift relief duty management responsibilities. The Kitchen Staff, Chefs, and Waiters report directly to this role. Being a small lodge, all the staff, including management in for others so this person must be prepared to step in and assist wherever necessary. The position is available from April 2021. Main duties in this role would be quality control of all meals, Food and Beverage Stock Control, Overseeing Kitchen and Restaurant Service operations. This person may also be called on to assist with website maintenance, reservations, duty management/relief lodge duty management, housekeeping supervision, hosting of guests, etc. Minimum 3-5+ years’ experience in a similar role is required.
Qualifications
Relevant Hospitality Qualifications will prove an advantage but not essential if well-experienced within upmarket 4/5* Lodges in a similar role.
Skills
Must ideally have a working knowledge of Innkeeper (Training will be provided if no experience), Nightsbridge, Excel, Word. Must also be able to work online booking platforms such as Booking.com, Expedia, Tripadvisor, etc. We are seeking a mature individual with a versatile skills set and adaptable nature but main focus is F&B Operations management. The person must be good with staff and be firm and able to work with and lead staff well. Must be fluent in written and verbal English and basic conversational Afrikaans.
